We make premium, Mediterranean cheese by hand, using fresh New Zealand milk. We make Halloumi and two types of cheese the first to be produced in New Zealand: Akkawi and Knafeh Cheese. Our cheese making process is the result of years of research and development, love and passion! We carefully and attentively create each batch by hand and monitor the entire process to ensure a consistent and high level of quality. We make all our cheese in a small factory we built outside our home in a quiet suburb of west Auckland.
Akkawi is a traditional Palestinian white brined cheese that stretches and melts; delicious in toasties, on pizzas and in savoury pastries.
Knafeh cheese is our own proprietary recipe, modifying the original Akkawi for extra stretchability.
