Witlof Parcels


  • 8 Witlof leaves
  • 2 cups crispy Chinese anchovies
  • ½ cup chopped red chillies
  • 4 tablespoons honey
  • 2 tbsp Lime juice
  • 1 cup chopped coriander

Heat oil in a pan to hot.

Fry the anchovies for 1 min. You are just trying to crisp them. Remove and set aside

Mix the anchovies, chillies, honey, lime juice and coriander in a bowl

Get a good dollop of the mix into each leaf. Pile it.

You should be able to pickup the whole leaf and eat it in one mouthful
