Wholemeal Banana Pancakes

Ingredients

  • 2 large bananas
  • 1 ½ cups wholemeal flour
  • 2 tsp baking powder
  • 1 ½ cups buttermilk, (or 1 cup milk and ½ cup plain yoghurt)
  • 2 eggs, lightly beaten
  • 1 Tbsp J. Friend and Co honey
  • J. Friend and Co Honey to serve

Method

Mash 1 banana in a bowl.

Place flour and baking powder in a bowl, make a well in the centre.

Combine buttermilk, eggs, honey and mashed banana in a jug. Pour into the flour and baking powder mixture.

Whisk until smooth. Stand for 10 minutes.

Melt a teaspoon of butter in a non stick frying pan over medium heat. Spoon ¼ cup batter into pan.

Cook for 2 - 3 minutes or until bubbles appear on the surface. Turn and cook for 1 - 2 minutes or until golden and cooked through then transfer to a plate.

Cover to keep warm and repeat with remaining batter, thinly slice remaining banana.

Place pancakes on plates and top with sliced banana and honey to serve.
