Walnut Pesto


  • 1 1/2 cups shelled fresh walnuts
  • 3 cloves chopped garlic
  • 1/4 cup grated parmesan cheese
  • a big handful of fresh basil leaves
  • sea salt and freshly ground black pepper to taste
  • 5 Tbsp of walnut or olive oil or a mix
  • 5 Tbsp cream


This pesto is good with pasta, on grilled vegetables, with polenta, on crostini and on roast chicken.
Place all the ingredients in a food processor and blend till chunky.
You may wish to add more oil or cream. Makes 2 cups.
