Strawberry Cream Muffins




  • 2 cups self-raising flour
  • ¾ cup sugar
  • pinch salt
  • 1 large egg
  • ¾ cup cream
  • ¼–½ cup milk
  • 1 cup chopped strawberries (or berries or fruit of your choice; frozen berries can be used, just allow extra cooking time)



Preheat oven to 160°C fan bake. Grease a muffin tray well. 

In a bowl, comine flour, sugar and salt.

In another bowl, combine egg, cream, milk and chopped strawberries (don't worry if they are a little mushy).

Add wet strawberry mix to dry mix and just combine. Do not over mix – ever so gently combine. Spoon into muffin pans and bake for 20 minutes (check after 15 minutes as ovens can vary).
