Sticky Date Puddings with Caramel Sauce



  • 1 cup water
  • 400g dates, pitted, chopped roughly
  • 125g butter
  • 1 Tbsp golden syrup
  • ¼ cup sugar
  • 1 tsp baking soda
  • 1 cup plain flour
  • 2 free-range eggs, lightly beaten
  • 2 tsp cinnamon


  • ½ cup brown sugar
  • ¼ cup golden syrup
  • 50g butter
  • 1 cup cream
  • 1 tsp vanilla essence


Put the water, dates, butter, golden syrup and sugar in a saucepan and boil for 3 minutes. Remove from heat.

Add the baking soda and whisk well to combine. Add the flour, eggs and cinnamon and mix to combine. Pour into ramekins and cook at 180°C for 35 minutes.

To make the sauce, heat all the ingredients in a saucepan over moderate heat until dissolved. Bring to the boil then reduce heat and simmer for 5 minutes or until the sauce reaches a lovely golden caramel colour.

Pour sauce over the puddings and serve with cream or ice cream.
