Sour Cream Streusel Coffee Cake

Ingredients

  • 2 large eggs or 3 small eggs, at room temperature
  • 1 cup sugar ¼ cup oil (not olive)
  • 250 g sour cream
  • 2 tsp lemon zest
  • 1 tsp vanilla
  • 1 ½ cups of flour
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • ¼ cup chopped dried apricots

Cinnamon Streusel Mix:

  • 2 Tbsp butter, softened
  • ½ cup coconut
  • ¼ cup brown sugar
  • 2 tsp cinnamon
  • 2/3 cup raisins

Method

Prepare a BUNDT Tin by spraying well with cooking spray and preheat the oven 180degC

Mix the eggs until they are frothy.

Beat in the sugar, blend well and then add the sour cream – mix through well and then the other ingredients.

Place half the batter into BUNDT tin. Sprinkle the cinnamon mixture over the batter. Add remaining batter.

Bake at 180 deg C for 50-55 minutes. Let the cake stand for 10 minutes, then turn out.

 

Streusel mix method: simply combine all together.
