1/2 cup J.Friend & Co Lake Kaniere Creamy Kamahi & Rata Honey
- 2 tbsp coconut oil
- 1 cup puffed rice
- 1/2 cup coconut flakes
- 1/2 cup flakes almonds, toasted 3 tbsp sesame seeds
- 3 tbsp chia seeds
- Good pinch of sea salt
- 100g dark chocolate, melted
Line a loaf time with baking paper.
Add honey and coconut oil into a small metal bowl. Heat over a double boiler until melted and the honey is a pourable liquid consistency.
While the honey is melting, add the rice bubble ingredients into a medium sized bowl. Giving everything a light toss.
Pour the honey into the rice bubble ingredients and give it a good mix until everything is well combined and covered in the honey liquid.
Press the rice bubbles into the lined loaf tin using the back of a spoon to get an even, flat top.
Pour over melted chocolate and place in the freezer to set for 30mins. Once set, cut the rice bubble slice into random pieces.
This will last in the freezer for up to 3 months.
