Provencal Style Fried Fish

Ingredients

  • 1/2 cup extra virgin olive oil
  • 12 large cloves garlic
  • 6 fresh fish steaks e.g hapuka or kingfish 
  • sea salt and freshly ground black pepper

WINE MATCH:

Selaks Berries and Cream Rose

Method

Slice the garlic thinly and heat till just golden in the oil.

Salt and pepper the fish and fry on both sides till just barely cooked or even slightly undercooked.

To Serve: Plate up fish and pour garlic infested hot oil over it.
