Pita Pockets


  • 4 Angel Bay Gourmet Beef Patties
  • 4 Pita Bread
  • 1 Cucumber
  • ¾ cup Plain Greek Yoghurt
  • 2 Cloves of Garlic, pressed or minced
  • Handful of Mint
  • Pinch of Salt and Pepper
  • 2 cups of Rocket
  • 1 Red Onion, sliced
  • 12 Cherry Tomatoes, sliced
  • ½ cup Cooked Rice
  • Fresh Coriander 2 x Lemons


Prepare the tzatziki by grating ½ of the cucumber and placing in a paper towel to drain liquid.
In a bowl, add the drained, grated cucumber, yoghurt, garlic, chopped mint, salt, and pepper and mix well. Cover and refrigerate until ready to serve.
Cook Angel Bay Gourmet Lite Beef Patties according to instructions on the packet.
Warm pita breads and cut around the edge in a semi-circle so they open like a pocket.
Dice remaining cucumber into small cubes.
Place rocket, patty, red onion, cherry tomatoes, cucumber, rice, and coriander in the pita.
Top with tzatziki and serve with a lemon on the side.
