Pickled Cucumber


  • 200ml Apple cider vinegar

  • 200g Castor Sugar

  • ½ tsp Brown Mustard seeds

  • 1 piece Star Anise

  • Cucumber, peeled and sliced on an angle


Add the first four ingredients to a pot and heat to dissolve the sugar. Allow to cool and strain. 

Add the sliced cucumber and leave for a few hours until well pickled.
