Pan-fried Flounder


4 flounder fillets

2 tbsp extra-virgin olive oil

2 tbsp butter

salt and pepper

Season the flounder fillets. Coat a heavy-based frying pan with oil and butter, preheat over a medium heat. Add seasoned flounder fillets to the pan, sauté for 3–4 minutes per side.

Serve with Saffron Beurre Blanc and Fennel Puree.
