- 2 cups desiccated coconut
- ⅔ cup coconut flour
- 1 tsp baking soda
- 2 lemons
- 3 Tbsps honey
- 6 eggs
Turn the oven on to pre-heat at 180 degrees.
In a food processor place the dry ingredients & whiz on high until combined & flour like.
Grate the rind of one lemon & add to the dry ingredients.
Juice the two lemons and set aside.
In a bowl combine all of the wet ingredients & whisk together.
Add to the dry ingredients & whiz in food processor until combined.
Line a loaf tin with baking paper & pour the batter into the loaf tin.
Place in the oven for 30 minutes or until the skewer comes out clean.
