Pacific Salmon Salad


Serves 4

1 kg fresh salmon, skin off deboned

½ cup lemon juice

½ cup lime juice

½ red onion, diced

1 spring onion, chopped

1 bunch coriander, chopped

1 red chilli, chopped finely

Salt and pepper

2 whole coconuts

½ cup coconut cream

Kumara chips to serve

Cut the salmon into 1cm cubes and place in a bowl. Add the lime juice, lemon juice and red onion and combine. Leave in the fridge for 7 minutes.

Add the rest of the ingredients. Mix and season to taste. Half the coconuts and place the fish in the coconut to serve along with a few kumara chips.
