Ingredients

275g (approx. 2¾ cups) rolled oats

225g soft butter (not melted, just soft)

150g caster sugar (½ cup plus 2 tbsp)

100g flour (approx. ¾ cup)

½ tsp baking soda

Method

Place oats in a food processor and blitz until quite fine. Add remaining ingredients and process until a ball forms, then stop.

 

Divide mix into a log, about 15x4cm wide. Wrap in clingfilm and refrigerate for a couple of days before baking (if you are in a hurry, leave for a minimum of 1 hour).

 

Preheat oven to 200°C and line a baking tray with baking paper. Cut log into 1cm-thick slices and place on prepared tray (well-spaced apart). Bake for 15-20 minutes.

 

Remove tray from oven. Leave cookies to cool for a few minutes on the baking tray then cool completely on a wire rack.
