Gyudon (Braised Beef with Konnyaku Noodle in a Bowl)

  • 1/2 brown onion, sliced 
  • 2–3 slices ginger, cut into julienne 
  • 2 1/2 Tbsp soy sauce 
  • 2 Tbsp cooking sake 
  • 2 Tbsp mirin 
  • 1 Tbsp white sugar 
  • 1/2 tsp dashi 
  • 1 cup (250ml) water 
  • 250g thinly sliced beef 
  • 100g konnyaku noodle (shirataki) 
  • 360g cooked rice 
  • toasted sesame seeds 
  • spring onion


Gyudon is a staple dish for Japanese people and the great thing is it’s a one-pot meal. ‘Gyu’ means beef and ‘don’ means donburi (bowl), ie. serving steamed rice in a bowl with beef on top! For this recipe I used konnyaku noodle (optional) called ‘shirataki’ which is made from konnyaku potato (high in mineral and very low in calories) but if you can’t find it, you can make this dish without it.

In a medium-size pot add brown onion, ginger, soy sauce, cooking sake, mirin, sugar, dashi and water and bring to boil. Reduce heat to medium-high and add beef.

Remove all the scum and add konnyaku noodle (shirataki). Cook for 20 minutes.

Put steamed rice in a serving bowl and place braised beef mixture on top of the rice. Garnish with sesame seeds and/or chopped spring onion and serve while nice and hot! You can drizzle the liquid on top of the beef too – so no waste!
