Fez Fashioned Lamb Burger




  • 1 Tbsp cottage cheese
  • 4 mint leaves
  • 1 Tbsp watermelon, pips removed and small diced
  • 4 chives, chopped
  • 2 sprigs coriander, chopped
  • 1/4 mild red chilli, finely chopped
  • cooking oil
  • 1 Silver Fern Farms lamb loin
  • 1 tsp orange fennel seasoning
  • 1 burger bun, sliced in half
  • 1 tsp extra virgin olive oil
  • 1 leaf Iceberg lettuce

Orange Fennel Seasoning

  • 1/2 tsp fennel seeds, lightly toasted
  • 1/2 tsp cumin seeds, lightly toasted
  • 1/2 tsp chili flakes
  • 1/2 tsp garlic flakes
  • 2 tsp flakey salt
  • 1 orange, fine zest only


Orange Fennel Seasoning

Mix the fennel seeds, cumin seeds, chili flakes and garlic flakes together. Using a mortar and pestle, crush/grind to a medium grind. Add the orange and salt and mix well. Store in an airtight container until required.

Combine cottage cheese and mint in a bowl and gently mix. Combine watermelon, chives, coriander and chili in a bowl and mix.

Heat a heavy-based fry pan, add a small amount of cooking oil and pan fry the lamb until medium-rare. Season with the orange fennel seasoning and allow the lamb to rest in a warm place for 2-3 minutes.

While the lamb is resting, toast the burger bun and then brush the cut side of the bun with olive oil. Slice the lamb loin on a heavy angle so as to achieve 4 long, oval slices.

Assemble the burger in the following order - toasted bun bottom, arrange the lamb slices to cover the bun, lettuce, cottage cheese, watermelon chili salsa, toasted bun top. Serve immediately and enjoy.
