- 120gms Chorizo Garcia (fresh)
- 30ml olive oil
- 100ml cider
From the kitchen of Curator’s House Restaurant, this is my favourite way to prepare chorizo and it’s so simple. The sweetness & acidity of the cider works so well with the warmth of the chorizo.
Cut the chorizo in approximately 1/2cm slices, and fry in a hot pan with the olive oil. Add the cider and keep on the heat until the cider has reduced and the chorizo is cooked.
Note: This recipe is very simple but the success lies in the use of good quality ingredients. Perfect as a starter or to serve with drinks along with crusty bread. Simple, fast and delicious. Cider can be replaced with white wine.
