Ingredients

2 tbsp oil
6 miniature chorizo

Salsa:
2 large ripe tomatoes, diced
1 bunch fresh coriander
½ red onion, finely diced
juice of 1 lemon
salt and black pepper

6 small dinner rolls
butter, to serve

Method

Preheat oven to 160°C.

Place a large frying pan over medium heat and add oil. Add chorizo and cook, turning continuously, until evenly browned all over.

To make salsa, in a bowl place tomato, coriander, onion and lemon juice. Gently mix until combined then season with salt and pepper.

Warm dinner rolls in the oven for 6 minutes. Slice rolls down the center, butter, fill with a chorizo and top with salsa. Enjoy!
