Chia Coconut with Sweet Mango


Coconut Chia

  • 425ml tin coconut milk
  • 3 tbsp palm sugar (light)
  • Pinch of salt
  • 5 tbsp chia seeds

Sweet Mango

  • 1 mango, cut in cubes
  • 2 tbsp sugar
  • 1-2 star anise
  • 2 tbsp water
  • Juice of 1/2–1 lime



A lot of people are starting to be more interested in what they eat nowadays. Chia seeds is one of the super foods that you can use in smoothies and salads etc, and is becoming a popular ingredient. One of the most interesting things about chia seeds is that they change texture when you add liquid and leave them for a while. It becomes almost a smaller version of sago/pearl! I love the combination of the sweet mango chutney and coconut flavoured chia – I hope you will enjoy this dessert as much as I do!

Put coconut milk and palm sugar into a small pot and bring to the boil. Just before it starts to bubble, remove from heat and add salt and chia seeds. Stir a couple of times and pour into glasses of your choice. Once they are cooled down, keep them in the fridge until you serve.

Place chopped mango, sugar, star anise and water into a small pot and bring to the boil. Reduce heat to medium-high and cook for 1-2 minutes. Remove from heat then add lime juice. Once cooled down, keep this in the fridge until you require it.

To assemble, scoop the sweet mango on top of the chia coconut and garnish with mint leaves if you have them.
