Caraway Bread Open Sandwiches with Lamb and Chimichurri

Ingredients

  • 2 Quick Wholemeal and Caraway Loaves (ends trimmed & cut into 6 slices) 
  • Sandwich Mayonnaise 
  • 1 Roast Lamb Rump 
  • 1 Tbsp Chimichurri 
  • microgreens to garnish

Method

Lay out Quick Wholemeal and Caraway slices on a clean work surface.

Generously spread each slice with Sandwich Mayonnaise.

Slice lamb rump thinly across the grain and cut each slice into 3-4 strips.

Top sandwich with 3 strips of lamb intertwined with each other to create height.

Drizzle ¼ tsp Chimichurri on top of lamb and garnish with microgreens.
