Basque-style Fried Fish




  • 1/2 cup Peta Mathias extra virgin olive oil 
  • 12 large cloves garlic 
  • 6 hapuka or kingfish steaks 
  • sea salt and freshly ground black pepper

Suggested wine match -  2014 Waipara Hills Equinox Sauvignon Blanc

Slice the garlic thinly and heat until just golden in the oil.

Salt and pepper the fish and fry on both sides until just barely cooked, or even slightly undercooked.

To serve, plate up fish and pour garlic-infested hot oil over. Serve immediately.
