Ingredients

  • 24 small potatoes
  • 2 Tbsp oil
  • 4 sticks rosemary
  • 1/2 L vegetable stock
  • Sea salt
  • 10 cloves of garlic, crushed

Method

Pre-heat the oven to 180 degrees.
 
Cut the potatoes in half, lengthways and then run a series of cuts across the top of the potatoes 2/3 of the way through.
Lay into a cast iron pan lined with greaseproof paper. Pour over the vegetable stock 1/2 way up the side and throw in the rosemary and garlic.
 
Cover with grease proof paper and tin foil.
 
Place into the oven for 30 minutes before removing the tinfoil. Pour over the oil and cook for further 15 minutes.
