Ingredients

Slaw

2 handfuls (130g) shredded purple cabbage

2 handfuls (130g) shredded green cabbage

2 carrots (130g), shredded

½ handful fresh coriander, chopped

50g dry bean vermicelli, soaked in hot water for
     5 minutes, rinsed under cold water and drained

Dressing

3 tbsp rice vinegar

1 tbsp soy sauce

1 tbsp brown sugar

1½ tsp sesame oil

 

10g fried shallots*, for garnish

Method

Toss all slaw ingredients together in a bowl and dress with the combined dressing ingredients. Garnish with fried shallots and serve with your main.

 

*Fried shallots are available from Asian food stores.
