- 2 eggs
- 1 cup caster sugar
- 150g butter (melted and cooled)
- 1 1/4 cups gluten-free Baking Mix (we used "Simple" brand)
- 1/4 cup West Coast Cocoa baking cocoa
- 2 large apples (grated)
- 1 cup of berries (frozen or fresh)
Preheat oven to 160 degrees celsius.
Line and grease a 22cm cake tin.
Beat eggs and sugar together until pale and creamy.
Slowly pour in butter and continue beating for a few minutes.
Sift flour and baking cocoa onto egg mixture.
Fold into mix to combine.
Stir in grated apple.
Spead batter evenly in cake tin.
Arrange berries on top and press into mix a little.
Bake for 1 hour 20 min (or until cake springs back when lightly pressed).
Delicious served warm for dessert, but also great when cool too, with a
spoonful of greek yoghurt. Cake can be dusted with icing sugar if
