100g unsalted butter, softened

300g icing sugar, sifted

1 tsp vanilla extract

75ml milk

good pinch of salt

Beat butter on high speed for a few minutes. Add icing sugar and mix on low speed until crumbly. Add vanilla and a splash of milk and beat on high. Keep slowly adding milk until you have a light, fluffy buttercream. Be sure to scrap down the sides of the bowl as you go.


If you're flavouring the buttercream, add your herbs, flowers, zests or whatever you are using with your milk so the flavouring gets beaten into the mixture. Add a little at first, and taste as you go, adding more if needed.
