We process our own organically grown garlic and sunchokes (jerusalem artichokes or topinambour) into gourmet products using the natural enzymes present. The caramelising effect increases the health benefits and produces fruit chutney/liqourice/balsamic type flavours. The black sunchoke and black garlic contain no additives, preservatives, colourings, added sugars, or any other substance. Any notorious reputation of the fresh produce goes, and the sulphur content changes into a very stable digestible form. The black garlic has over 2yrs shelf life. The extra antioxidants produced enable us to make our raspberry mousse and raspberry chocolate spread without added sugar or alternative sweeteners. There is no requirement to cook these products and it is recommended to add to meals at or near the end of the cooking process.
