Gilles Thebault, the French born chief baker started with humble beginnings by selling fresh baked French bread at the local Farmer’s Market. Selling up to 200 breads in 2 hours, he and his wife Nikki decided to put up the most excellent bakery in Merivale called Le Panier Boulangerie in 2013.
This bakery does not only look like it came straight out of the Parisian streets but the delicious baguettes, croissants, pain au chocolat and other baked goods add to the illusion of a nice day under the sun in Paris. This is due to Gilles’ belief that the key to good bread is to just keep it rustic. All his breads are all baked by hand and are meticulously made to perfection.
