James Smith- AKA The Tattooed Butcher has competed in countless competitions across the world and most recently he was crowned the 2020 NZ butcher of the year against some of the best in the country. James' passion for his trade is infectious, it's been a while since we did a demo on butchery, we are pleased to have James show us how to break down a side of lamb for your freezer.
