Sonia Petrowsky Haumonte is the talent and owner behind Parnell’s Patisserie Vaniye. Her passion for artistic and innovative creations began in France where she worked at the prestigious five-star hotel Park Hyatt Vendome, Le Laurent a Michelin Star restaurant in Paris as well as Disneyland Resort Paris in charge of strategic development and conceptualisation.

Sonia is a food adventurist with an enduring curiosity to push boundaries and challenge conventions to create a specific experience that captivates the senses, taking you on a culinary tour.

The minimalistic, contemporary Patisserie Vaniye is a space where one can enjoy elegant Parisian style treats. The Parnell patisserie was inspired by a passion for sensational flavours and a desire to continuously create new culinary experiences for dessert lovers.

Patisserie expert Sonia Haumonte takes you on a culinary journey in her demonstration of the famous French Saint-Honore Choux Pastry cake.  Armed with a Kenwood Chef Sense kitchen machine, Sonia will show you how to tackle one of the behemoths of pastry, creating this complex classic dessert before your very eyes.
