I have always enjoyed the saying "To eat and drink is to survive, but enjoying fine cuisine is to be alive."
I have made a career from entertaining peoples senses and considered most, but not all, things culinary from molecular gastronomy to takeaway burgers. I've discovered that 5 star dining lacks flavour unless you share it with like-minded companions who savor each mouthful.

Culture and climate define product and technique; seasons regulate availability and evokes anticipation. Taste is subjective and emotionally charged, with potential recollections of good and bad.

The word 'cuisine' by definition, identifies a location to which we can associate certain elements that are as personal as a signature. To master all cuisines would be the same as learning every language known to man and in there lies the challenge.
