Parmigiano-Reggiano is one of the best cheeses to eat and use in the kitchen as it is full of flavour and high in essential fatty acids which promote an increase in lean body mass, fat loss and resting energy expenditure. It also acts as a cancer preventative and is recommended as being suitable for the diet of babies, athletes and the elderly.
At Sabato we have sourced superior quality Parmigiano-Reggiano from a unique small production farm located in a park in Reggio-Emilia. This privately owned park comprises 250 hectares, half of which is wooded, with a natural lake providing all the water to the farm. With such a beautiful setting and happy cows it is no wonder the cheese tastes so good.
There are strict laws governing the production of Parmigiano-Reggiano, and all cheeses sold in Europe carrying the name must have Designation of Origin Protection (DOP) certification. This certification covers all aspects of production, including the diet and breed of the cows, the ageing conditions, and the quality of the cheese in its final stage. Cheeses not carrying the DOP certificate or being sold simply as ‘Parmesan’ are likely to be artificially flavoured imitations of the real thing.
However, not all Parmigiano-Reggiano, although Designation of Origin Protection certified, is of the same superior quality. For the first time at the Food Show visitors can see a wheel being cracked by our cheesemonger and have the opportunity to taste authentic Parmigiano-Reggiano to find out why it is so superior. There will also be a one-off show special that is not to be missed.
