Using marzipan, pastillage, chocolate, sugar work, tuille or other pastry preparations, competitors create a gorgeous gateau with edible garnish.


1:00: Buffet or Restaurant Centrepiece

The creation of a centrepiece using any edible medium that is semi-perishable, such as sculpted vegetables or fruit, margarine or chocolate.

10:30 - 11:30: Superb Soup

Competitors have one hour to prepare and produce soup in any style.


12:00 - 1:00: Beef Main Course

Using beef as the principle ingredient, competitors have one hour to produce a main course.


1:30 - 2:30: Hot Chicken Brunch

Competitors have one hour to produce four individually plated covers of Hot Chicken Brunch style dish.


3:00 - 4:00: Salmon Entrée Course

Competitors have one hour to prepare and present four identical main course portions, using salmon as the main ingredient.


4:30 - 5:30: Pasta Main Course
Sponsored by Whitereia Community Polytech

Competitors have one hour to make pasta dough or pastes and create a main course pasta dish.

11:00 - 12:00: The Trainee Waiters Table
Sponsored by Hospitality Standards Institute

Trainees must change a tablecloth, then lay the table with a modern A la Carte setting finished with napkin folds.


1:00 - 2:30: Wine and Food Service with Table Setting
Sponsored by VIVO

Competitors will be judged on the presentation of the table top and flair, innovation, style and confidence of service.


3:00: Classic Cocktail
Sponsored by Hospitality Standards Institute

In just 10 minutes, competitors will make two dry martinis, two glasses of Harvey Wallbanger and two glasses of either a Margarita or Golden Dream.

A team comprised of two trainee chefs and a trainee waiter have 2 1/2 hours to prepare and serve five identical portions of soup, main course and dessert.

Competitors must prepare and produce four identical entrée course portions, using lamb as the principle ingredient.


3:00 - 4:00: Pork Main Course

Competitors must prepare and produce four identical main course portions, using pork as the principal ingredient.

Competitors must prepare and produce four identical main course portions. The presented dishes must include 'food from the sea'.

Competitors have 20 minutes to decorate one large Cowell's Genuine Pavlova from the ingredients supplied in the magic box.

The search for Wellington's absolutely positively best craftsperson in the kitchen.  A three-hour event involving the creation of a cold entrée, a hot main course and a hot dessert.

Competitors will have a staggered commencement time and will prepare and produce six individually plated portions.
