Rex owns Citron Restaurant in Wellington, rated as one of the best dinning experiences in the city and has opened Inspire at The Spire Boutique Hotel in Queenstown.
He has won many culinary awards, including New Zealand Chef of the Year, Dominion Post Chef of the Year, Wellington Felix Award Outstanding Chef; and is a Beef & Lamb Ambassador for a record fifth time.
Rex is also a consultant chef to Air New Zealand and other food producers. His guests have included the royal family, Swiss presidents, international ministers, fashion designers, musicians and actors.
