ZespriI Green and Gold Kiwifruit, Passionfruit and Mint Salad 

Prep: 6 hours

 

Ingredients

  • 140g (2) Zespri green kiwifruit (peeled and cut into 5mm dice)
  • 120g (2) Zespri gold kiwifruit (peeled and cut into 5mm dice)
  • 30ml (2 tbsp) passionfruit syrup or pulp
  • 28g (2 tbsp) ginger in syrup (cut into 2-3mm dice)
  • 10 mint leaves (finely sliced)
  • 15 whole mint leaves
 

Method

To enable you to begin preparation 24 hours ahead of your guests arriving the kiwifruit can be diced and put into a 1:1 sugar syrup to just cover. Refrigerate overnight or for up to 6 hours in advance of serving.

Drain the syrup from the kiwifruit and discard. Prepare remaining ingredients and just prior to serving combine salad as below.

MethodInto a medium-sized bowl place kiwifruit, passionfruit syrup, ginger and sliced mint. Gently stir to combine.

Serve with Bruleed Ginger Custards and garnish with a whole mint leaf.
