Sweet for the Darkness
 Yoghurt and Saffron Dessert 

Ingredients

  • 3 cups thick Greek style yoghurt
  • 1/4tsp saffron threads
  • 1/4 cup sugar
  • 1 cup mango pulp
  • 1/2tsp ground cardamom
  • 1 1/2 cups finely diced fruit like grapes, bananas, oranges, apples, melon, passionfruit, peaches, pears, pomegranate seeds - whatever is in season
  • 1/4 cup toasted almond slivers
 

Method

If you can't find thick Greek style yoghurt, line a sieve with muslin and drain regular yoghurt over a bowl for a few hours. This thickens it by getting rid of the water.

Soak saffron in 1 tbsp hot milk for 30 mins.
Whisk sugar into the thick yoghurt. Stir in the mango pulp, cardamom, saffron and diced fruit.

Sprinkle the toasted almonds over the top.
