Super Easy Vegetable Bake 

Cooking: 1 hour

 

Ingredients

Diced bacon, ham or smoked chicken to this mix with great results - it really is a "clean up the fridge" dinner option and SO EASY!

  • Canola cooking spray
  • 375g grated tasty cheese
  • 2 cups baking mix
  • 2 cups grated courgette, pressed firmly into the cup
  • 2 cups grated carrot, pressed firmly into the cup
  • ½ cup Italian parsley, chopped
  • 1 cup Canola oil
  • 8 eggs, beaten
  • Salt and pepper to taste
 

Method

Serves 4-6

Preheat the oven to 200C. Spray the baking dish with Canola oil liberally.

In a large mixing bowl combine everything together (except the Canola spray).
 Press the mixture into a deep dish pie plate.

Bake at 200C for 1 hour.

Please note the slice will look quite coloured on top prior to being cooked inside.
Remove from the oven and let rest for 20 minutes.

Serve with a green salad and crusty bread.
