Method
This is a great cake - simple and so easy - you
can mix it in the baking tin and the apple
syrup addition just
makes it sing with flavour!
Butter a 25cm cake tin. If you are careful with the mixing even
a loose bottomed cake
tin will do - you can mix it all up in
the tin!
Let the butter cool, put apple, brown sugar and apple syrup in
cake tin. Mix well with
egg using a fork, add dry ingredients,
stir well. Add dried fruit and nuts.
Bake 180C for 45-60 minutes. Test with a knife and when clean pull
out of oven and
drizzle with apple syrup while hot. Serve warm with
natural yoghurt - a dusting with icing
sugar looks very
good.
