Shepherd’s Salad with Feta 

CATEGORIES: Dinner, Vegetarian

Ingredients

  • 400 g (14 oz) tin chickpeas, rinsed and drained
  • 150g feta cheese, crumbled
  • Small handful fresh flat-leaf (Italian) parsley
  • 2 Lebanese cucumbers, chopped
  • 1 green capsicum (pepper), chopped
  • 50g black olives, halved and pitted
  • Dressing 
3tbs olive oil
  • 1tbs lemon juice
  • Sea salt
  • Freshly ground black pepper
 

Method

Gently mix together the chickpeas, feta, parsley, cucumber, capsicum and olives in a large bowl.To make the dressing, whisk the olive oil and lemon juice and season with salt and pepper. Toss the dressing with the salad.
