Pork, Prawn and Grapefruit Salad with Fresh Chilli 

CATEGORIES: Salad

Ingredients

  • 200g pork mince - cooked in ¼ cup water
  • 300g prawns - deveined and fried in hot a wok until colour changes.
  • ½ cup fresh dill
  • ½ cup mint
  • ½ cup coriander
  • 3 shallots
  • 1 long red chilli
  • 2 Tbsp fried shallots - optional
  • 1tspn fried garlic - optional
  • ¼ cup crushed peanuts
  • 2 lime leaves
  • Grapefruit or pomello - segmented

Dressing

  • 3 Tbsp lime juice
  • 3 Tbsp sugar
  • 2 Tbsp fish sauce



 


 

Method

Cook pork and prawns as directed. Combine in a large bowl with everything else, then drizzle over dressing and combine. Top with fried garlic and shallots.

 

Dressing Method

Combine all ingredients, drizzle over dressing then sprinkle with shallots, garlic and peanuts.
