Pea and Wasabi Sauce

Ingredients

  • 500g Watties Baby Peas
  • 30g Onions, finely diced
  • 10g garlic, finely chopped
  • 2 tbsp oil
  • 1 tsp wasabi powder
 

Method

Heat a pan with oil. Add the onion and garlic and sauté until soft and transparent. Take the onion and garlic out of the pan and allow to cool. Place the thawed peas, onion and garlic in a blender and blend until smooth. You may have to add a little water to enable the pea mixture to puree. If your blender doesn't blend it until smooth, pour it through a sieve.

Store it in a plastic container in the fridge until you are ready to use it.

When ready to use, place in a pot and warm up slowly, add wasabi powder and mix in thoroughly. Check seasoning.

Serve with pan fried salmon or snapper and garnish your dish with pea tendrils.
