Serves 2
Soften the ice cream slightly by leaving it out of the freezer
for about 10 minutes.
Grate lime zest into it and add the toasted coconut. Stir
through. Put back in freezer until required.
Preheat oven to 170° C. Line a tray with baking paper.
To make the brittle
mix sesame seeds and sugar together with just enough water -
start with 1 tablespoon - to moisten the mixture so that it forms a
thick paste.
Spread paste onto prepared tray and bake for about 20 minutes or
until it is bubbling and crackling. Check frequently to make sure
it doesn't burn.
Remove from the oven and, when it has cooled, break into pieces.
Store in an airtight container until required.
Serve ice cream and sesame brittle with grilled mango pieces for
a sensational dessert.
