Wild about the taste of Thailand
I thought it appropriate to choose game for a jungle curry,
but if that is not what you fancy it is quite all right to use
tamer meat, or even poultry. We tested the recipe with fillets of
kangaroo, which is very lean and healthy. You can do the same with
venison, if it is more readily available.
Slice the meat into thin strips and marinate in the curry
paste.
Heat half the oil in a wok and when smoking hot stir-fry the
beans for a few minutes.
Remove from wok and set aside.
Heat the remaining oil and stir fry the marinated meat.
Add the Kara coconut milk and return the beans, simmer until
beans and meat are just cooked.
Serve with steamed jasmine rice.
