Hot Sour Salmon and Roasted Peanut Salad

Ingredients

  • 3 tablespoons fish sauce
  • 1 tablespoon sugar
  • 3 tablespoons lime juice
  • 1 tablespoon sesame oil
  • Large pinch hot chilli flakes
  • 1 small red onion, finely chopped
  • 2 handfuls baby Cos lettuce leaves
  • 200g cherry tomatoes, halved
  • ½ cucumber, peeled, cut into bite-sized pieces
  • 4 tablespoons soy bean oil
  • 500g skinned boned salmon fillet, thinly sliced on the diagonal
  • ½ cup roasted unsalted peanuts, chopped
  • Mint and coriander leaves for serving
 

Method

Put the fish sauce, sugar, lime juice, sesame oil, chilli flakes and onion into a bowl and mix well.

Taste and adjust the flavour balance if necessary. Reserve.

Put the lettuce, tomatoes and cucumber onto a serving platter.

Heat the oil over moderate heat and fry the salmon until browned and crisp.

Remove from the oil, drain well and place on top of the lettuce.

Pour the dressing over the top, sprinkle the peanuts and mint and coriander leaves on top and serve.
