Method
Put the fish sauce, sugar, lime juice, sesame oil, chilli flakes
and onion into a bowl and mix well.
Taste and adjust the flavour balance if necessary. Reserve.
Put the lettuce, tomatoes and cucumber onto a serving
platter.
Heat the oil over moderate heat and fry the salmon until browned
and crisp.
Remove from the oil, drain well and place on top of the
lettuce.
Pour the dressing over the top, sprinkle the peanuts and mint
and coriander leaves on top and serve.
