Method
Roll out savory short pie pastry and place in a greased 28cm pie
plate. A removable base pie plate is ideal for this pie. Chill in
fridge while ingredients are prepared.
Sweat 1 medium chopped onions and 2 cloves garlic in 2 Tbsp
butter on low heat. Place in a large bowl with 400g par-cooked
(microwave is ideal) pumpkin, 60g fresh spinach chopped, 45g
broccoli (par-cooked in microwave) and a can of drained tuna and
roughly broken up.
Place in uncooked pastry shell. Crumble 100g cheese over
vegetables. Beat 2 large eggs and 1 cup cream and pour over
vegetables. Brush the pastry edges with a little milk. Bake 180°C
for about 40 mins till golden.
Serve warm, not hot, with a spoonful of relish or chutney.
