Grass Fed Beef Fillet with Sweet Mustard Sauce and Stir fried Spinach with Garlic

Ingredients

  • 15ml {1 tbsp} corn oil
  • 1kg-1.2kg beef fillet (trimmed of all silver skin and at room temperature)
  • Freshly ground white pepper
  • Sweet Mustard Sauce
  • Stir fried Spinach with Garlic
  • For Stir-Fried Spinach with Garlic
  • 30ml (2tbsp) corn oil
  • 1tsp salt
  • 700g spinach leaves (washed)
  • 2tsp sugar
  • 4tsp finely chopped garlic
 

Method

Serves 6

Pre heat oven to 200ºC. Drizzle oil over beef and using your hands rub the oil to coat all sides. Place beef onto tray and sprinkle generously with pepper. Place into pre heated oven and cook 25-30 min till medium rare or 30-35 min till medium-rare.

Remove from oven and rest away from the heat under heavy tea towels for 15 min. Cut beef into 6 equal portions, drizzle with Sweet Mustard Sauce and serve with Stir Fried Spinach with Garlic.

Stir fried Spinach with Garlic

Place a large wok or frypan over a medium heat. Add oil and once hot add salt and spinach. Stir-fry for approximately 1 min to coat leaves thoroughly with oil. Place a lid on pan and cook a further 1-2 min or until spinach has wilted to approximately one-third of its original size.

Remove lid and toss well. Add sugar and garlic and continue stir-frying for approximately 1 minute or till tender and remains bright green.

Drain off liquids and serve hot.
