In a salad bowl, mix the dressing ingredients. Taste this and
adjust the seasonings. You want it to be salty, sour and have some
heat from the chilli.
Add the salad ingredients and toss. Allow to sit (or
refrigerate) for 30 minutes before serving as the flavours need
time to get to know each other. Garnish with peanuts just before
