Grapefruit and Bean Sprout Salad

Ingredients

Salad

  • 2 handfuls mung bean shoots, chopped
  • 2 grapefruit, segmented
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped coriander
  • 1/2 cup roasted peanuts

Chilli Lime Dressing

  • juice from 2 limes (or 1 lemon)
  • 1/2 teaspoon sesame seed oil
  • 1 red chilli, deseeded and chopped fine
  • 2-3 tablespoons grated palm sugar (or brown sugar)
  • 2 teaspoons fish sauce
  • 1/4 teaspoon salt
 

Method

In a salad bowl, mix the dressing ingredients. Taste this and adjust the seasonings. You want it to be salty, sour and have some heat from the chilli.

Add the salad ingredients and toss. Allow to sit (or refrigerate) for 30 minutes before serving as the flavours need time to get to know each other. Garnish with peanuts just before serving.
