Ginger Marinade

Ingredients

  • 20 kaffir lime leaves roughly chopped
  • 2 tbsp fresh lime juice
  • 2 tbsp sugar
  • ½ cup peeled and chopped fresh ginger
  • 2 ½ tbsp oil
  • ¼ cup white wine vinegar
  • ¼ cup soya sauce
 

Method

This Ginger Marinade is perfect for the Tuna, Avocado and Radish Salad recipe.
Put sugar, Kaffir lime leaves and lime juice in a small saucepan. Heat over medium heat and bring to the boil, stirring occasionally. Remove from the heat and allow to cool. When the mixture reaches room temperature strain. Put the ginger in a blender and blend, adding oil in slowly. Blend until smooth. Transfer to a medium sized mixing bowl and stir in the vinegar, Soya Sauce and reserved lime syrup. Set aside.
