Ingredients
- 1 cup Alison's fruit nuggets*
- 1 cup water
- 1 tsp cornflour or custard powder sweetener equivalent to 2 tsp
sugar
*If fruit nuggets are not available use a mixture of dried
fruit such as dried apples, apricots, nectarines, peaches,
sultanas, etc.

Impress your friends and family with fruit-filled filo
treats!
Cut the dried fruit into pieces about the size of peanuts, and
simmer them with the water in a small pan for 5-10 minutes until
the fruit is soft, then thicken with the cornflour or custard
powder mixed to a thin paste with a little water. Cook until the
liquid thickens. Sweeten to taste with artificial sweetener, then
leave to cool.
Lie a sheet of filo pastry flat, spray it lightly with non-stick
spray, then place another sheet on top of it. Cut crosswise into 4
strips. Place an eighth of the fruit mixture at the top of one
strip, then fold the corner over the filling. Continue folding to
the end of the strip. Repeat with the other three strips,
then repeat with 2 more filo sheets, making 8 triangles
altogether.
Put these on a baking sheet, spray lightly with non-stick spray,
and bake at 200°C for about 10 minutes, or until lightly brown.
Cool on a rack and serve warm, dusted with half a teaspoon of icing
sugar shaken through a sieve.
Overlap 4 strips of filo with their long sides touching, and
spray lightly with non-stick spray. Place the fruit filling in a
line down one end and roll up loosely, starting at the end with the
fruit. Bake on a baking sheet at 200°C for 12- 15
minutes until lightly browned. Serve cold or reheated, cut in 8
slices with a very sharp serrated knife. Sprinkle with icing sugar
as above.
Optional: Garnish each serving with a strawberry or 2 or 3
grapes.
Cut half a sheet of filo crosswise into three strips.
Arrange these over each other, like a six pointed star. Place
quarter of the filling in the centre of each and gather up the
edges like a money bag, squeezing them in place, keeping the ends
of each strip facing outwards. Spray lightly with non-stick spray,
repeat, making three more, then bake at 200°C for about 10 minutes
or until golden brown. Sprinkle lightly with a little icing sugar
and serve warm.
