Crumpet Bread with Truffle Mascarpone Dip

Ingredients

  • 140g standard flour
  • 5g baking soda
  • 250ml butter milk salt
  • 150g mascarpone (preferably Italian)
  • 2 Tbsp finely chopped spring onion
  • 2 Tbsp mushroom truffle paste (Crema Con Tartufo)
  • Pinch of salt
  • 2 grinds black pepper
 

Method

Crumpet Bread

Dissolve the baking soda in the milk then mix in flour and salt. Place into a 20cm solid based pan and cook on a medium heat approximately 5 minutes on each side then place in a preheated oven at 180°C degrees. Cook for a further 5-10 minutes until cooked through.

 

Truffle Mascarpone Dip

In a bowl, mix together mascarpone, spring onion, truffle paste and salt and pepper. Set aside.
